Pandan Chia Pudding

One of my favorite breakfast (or even desserts) recipes is chia pudding. It's simple and delicious and super easy to adjust to your personal preferences. Whether you like it more sweet or prefer to dress it up with granola, fruit, and nuts, there is basically no way to go wrong.

Ingredients
  

  • ½ C Almond Milk (Coconut & Oat Milk work too)
  • 2 tbsp Chia Seeds
  • tsp Pandan Extract (for a stronger flavor - 1/2tsp)
  • 1 tsp Honey (or monkfruit)
  • Unsweetened Coconut Flakes
  • Chopped Almonds

Instructions
 

  • In a bowl or mason jar, combine milk, chia seeds, sweetener, and pandan extract. Stir well and cover
  • Let the mixture sit for a minimum of 2hrs or overnight in the fridge
  • When ready to eat, sprinkle with coconut flakes and chopped almonds (fruit too - strawberries, blueberries, bananas)
